For the 21st century we need to learn how to cook for ourselves again, and we need to stop relying on animal products as the center of our cooking,
whatever
our diet may be, or our cultural heritage may be. As many great chefs, such as the NY Times' Mark Bittman, and many ordinary people will affirm, you don't necessarily have to be a vegan or a vegetarian to enjoy the new 21st century table, but I hope it will lead you there eventually. There are so many other wonderful foods out there that we can prepare with flavor and flair! It would take several lifetimes to explore the world of cuisines and the vast array of plant-based foods available to us. It's a real adventure, so go for it-- for the planet, for your health, and for your pleasure.
